“International Gastronomic Heritage – Disciples Escoffier”

The 2025-2026 class brings together 18 passionate students – 9 in the kitchen and 9 in service – who, throughout their training year, experience a multitude of projects and experiences, combining professional rigor, creativity and team spirit.

High-level work-study training

Students follow a demanding alternating schedule over 13 months: two weeks at their training establishment and one week of regrouping at the Institut Notre-Dame La Riche in Tours. They work in prestigious establishments: Michelin-starred restaurants, renowned establishments, alongside renowned chefs, Meilleurs Ouvriers de France (Best Craftsmen of France), Michelin-starred chefs and excellent maîtres d'hôtel. This immersion allows them to develop their skills in direct contact with the most qualified professionals in the sector.

Workshops and training experiences

  • Team building workshops: developing mutual support between cooks and servers, an essential value transmitted by Escoffier.
  • “Le Fourneau des Escoffier” workshops: privileged exchanges with Meilleurs Ouvriers de France and multi-starred chefs around the creation of gourmet dinners.
  • Restaurant management workshops: complete immersion in the management of an establishment, from designing the offer to the customer experience.
  • Nomadic workshops: participation in exceptional events such as the prestigious Truffle Dinner at the Château d'Artigny and the Tomato Festival at the Château de la Bourdaisière.

Supervised projects: a range of possibilities

The supervised projects for this class have not yet been defined. They may take different forms depending on the students' sensitivity and creativity:

  • Organization of gastronomic or charity events,
  • Promotion of talented producers and artisans,
  • Development of quality approaches or innovative projects,
  • Or other themes brought by the students themselves.

International openness and recognition

A highlight of the training remains the induction as Young Escoffier Talents, during the Tomato Festival at La Bourdaisière: a symbolic moment of recognition and commitment to the values of transmission and sharing.

Finally, the students will undertake a six-week international mission. The destinations have not yet been finalized, but thanks to the Disciples Escoffier's international network, these missions will be able to take place across five continents, offering an unparalleled opportunity to experience the diversity of gastronomic cultures and prestigious professional environments.
